Benefits of Olive Oil

Polyphenols are what makes olive oil healthy!  It also is what holds its structure.  The higher the polyphenol count the more robust & more capable of handling heat.  (No more than medium-high heat.  Anything higher will breakdown its structure.) There can be anywhere between 50 to 5000 polyphenols in each olive!


If you have old olive oil don't throw it away!  You can also use it for non-edible purposes.
